Designed as a batch prepared mix which is packed with essence associated with festive period, rendering it excellent for a festive gathering. Save the extra cordial to use in morning drinks, desserts, or to make another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 people
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Put every ingredients in a saucepan, bring to a gentle boil, mixing until the sugar dissolves. Then, take off the burner and leave to reach room temperature completely. Decant into an sterilised bottle, close it and refrigerate it chilled, where it will keep for up to one month.
For the Cocktail Base: Pour the specified spirits and syrup into one sizeable container, allow it to infuse for 60 minutes, then filter it , ideally through a fine cloth, making it perfectly clear.
For serving: Add 85ml of the cocktail base into your stirring glass filled with ice, and stir gently for about 60 seconds until cold. Strain into a frosted cocktail glass or similar, decorate with the cranberries and complete it with a brief mist of mandarin oil over the drink.
